When I first saw these star mint meringues on BHG.com, I knew they needed to be included in the 101 Days of Christmas series. They’re unique enough to get lots of oohs and ahs, but easy enough to pull off no matter your skill level!
My husband really loved these, with their surprisingly light and airy texture, and they’d be fun to make in a variety of colors all year long!
- 3 egg whites
- 1⁄4 teaspoon cream of tartar
- 1⁄4 teaspoon peppermint extract
- 1⁄8 teaspoon salt
- 3⁄4 cup sugar
- red paste food coloring
Preheat oven to 200 degrees F.
Combine egg whites, cream of tartar, peppermint extract, and salt and beat with an electric mixer on medium speed until soft peaks form. Slowly add sugar to the mix and beat on high speed until stiff peaks form.
Add a 1/2″ open star tip to a pastry bag and use a clean paintbrush to add stripes of red paste food coloring to the inside of the bag. Carefully add meringue to the bag.
Pipe 2″ stars onto a cookie sheet lined with parchment paper (if using stoneware, no need to use parchment paper).
Bake for 1-1/2 hours. Meringues will be firm and look dry. Transfer to wire rack to cool.
