Two years ago, I went on a chex mix craze and discovered the world’s best flavor, but since then I haven’t really felt the need to try any more flavors. Why mess with perfection?
This year, though, I realized I’ve never made a peppermint or candy cane flavored version, which seemed like a huge oversight on my part, don’t you think?
So my oldest daughter and I set to work. With a base of chocolate Chex, popcorn and pretzels, and a white chocolate and peppermint coating, this stuff is festive and addicting. I don’t love the crunch of the candy canes (ahem, star peppermints in my case since it’s still September and my stash from last year is gone!), but I do love the flavor. And the girls picked through it just for the peppermints, which made it fun to share with them!
- 4 cups Chocolate Chex
- 2 cups popped popcorn
- 2 cups pretzels
- 1/4 cup butter
- 1/2 cup brown sugar
- 1 tablespoon water
- 8 ounces white chocolate
- 1/2 teaspoon peppermint extract
- 1 cup crushed candy canes
Preheat oven to 250°F.
In large bowl, combine cereal, popcorn and pretzels. Add butter to a 9×13 pan and put in oven to melt. Once melted, stir in sugar and water until well mixed. Add cereal mixture, stirring until evenly coated.
Continue baking for one hour, stirring regularly.
In a small saucepan, melt white chocolate over low, stirring often. Remove from heat and stir in peppermint extract.
Remove chex mix from oven and immediately add crushed candy canes and white chocolate. Stir to coat. Let cool. Store in an airtight container in the pantry.
- Use regular chocolate instead of white chocolate for the final coating.
- Skip the candy canes and use 1 teaspoon peppermint extract instead.
