Nikki's Easy Jambalaya

Serves: 4
  • 1½ cups rice
  • 3 cups water
  • 1 onion, large dice
  • 1 bell pepper (red, yellow, or orange), large dice
  • 2 cloves garlic, minced
  • 1 pound sausage (Kielbasa, chicken, or another smoked sausage), cut in half length-wise, then in disks (the result should be half circles). I like to make sure it is all-natural with no nitrates such as Aidells, or Trader Joe's brand.
  • 1 15oz can diced tomatoes, undrained
  • 2 teaspoons thyme
  • 1 teaspoon basil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 cup chicken stock
  • Salt & Pepper to taste (This depends on the rice you serve and the type of sausage you use; I start with 1 teaspoon of salt and ½ teaspoon of pepper for the whole batch.)
  1. Start your rice. Cook according to package instructions. {For white rice, bring water to boil, add rice, return to boil. Reduce heat and simmer for 15-20 minutes until most of the water is absorbed.}
  2. Meanwhile, chop your onions.
  3. Saute the onions in olive oil. Now chop the other veggies and sausage. When the onions are half done (about 3-5 minutes) add peppers. Saute another 3-5 minutes. Add garlic and sausage. Mix together and smell the sweet aroma of that garlic. Add the remaining ingredients, bring to boil, reduce heat. Simmer for 15 minutes to let flavors mingle. Serve over rice (or combine them once the rice is done so it is a one dish meal on your table).
  4. Note: this can cook for less time or more time depending on your busy schedule. Make it fit your hectic evening and you will be happy either way!
