101 Days of Christmas: Oatmeal Lace Cookies

Oatmeal Lace Cookies {101 Days of Christmas at}

My friend Denise has four girls that are spaced much like ours…except hers are all about 10 years older. It’s so much fun to watch them interact and see what the future might hold for us (and I think she feels the same way about looking back into the past when she watches our girls play!).

We occasionally drop the girls off at their house so we can sneak in a date night or appointment, and they’re always bubbling over with excitement when we get back as they talk about the banners they colored or the cookies they made. This year, Denise and I have also been trying to sneak in coffee or lunch when I’m in town and we both have an hour or two free.

During a couple of our visits, her girls have made these delicious oatmeal lace cookies, and I fell in love.

Crispy on the edges, slightly chewy in the middle, these are sweet cookies, but not overwhelmingly so since they’re so thin. They pair perfectly with tea or coffee, and I’m definitely adding these to my {overly ambitious} Christmas baking list for this year!


  • 1/2 cup salted butter
  • 1 cup rolled oats
  • 2/3 cup sugar
  • 1 egg, beaten
  • 3/4 teaspoon vanilla
  • 1 tablespoon flour


Preheat oven to 350 degrees F.

In a medium saucepan, melt the butter. Let cool and add remaining ingredients, except the eggs. Mix well. Add the eggs and mix until combined.

Drop rounded tablespoons of dough (it’s really more like a batter) 3″ apart on a cookie sheet lined with parchment paper.

Bake for 15-18 minutes until lightly golden brown.

Note: The cookies will look pretty soupy at first, and you may wonder if you did something wrong, but just let them be – it’ll work out; I promise!

Let cool for 5 minutes on cookie sheet before using a spatula to transfer them to a wire rack to cool completely.
