101 Days of Christmas: Cranberry Crunch Bark

I love to make “barks” — chocolate barks, almond barks, vanilla barks, etc. — not only because they’re different than traditional cookies and candy but also because the variations are practically limitless, and they have a little crunch to them, which makes them just about perfect in my book.

This cranberry crunch bark from Pampered Chef is great to make with kids because it only has a few ingredients and a few steps, but it feels a lot like you’re playing with your food as you spread out the mixture and press the topping on top!

Ingredients

  • 20-24 oz. vanilla flavored almond bark
  • 1 cup slivered or chopped almonds
  • 34 cup sweetened dried cranberries
  • 2 cups rice Krispies

Directions

Mix almonds and cranberries and divide them in half. Add rice Krispies to one half and mix well.

Melt almond bark on the stovetop or in the microwave. When completely melted, stir in the cereal mixture.

Line a baking sheet or bar pan with parchment paper and spread the mixture evenly. Sprinkle the remaining nuts & cranberries across the top and gently press them down so they stick.

Let cool completely and then break into pieces. Serve on a platter or give as a gift in cookie tins or treat bags.
